Pumpkin {Chocolate Chip} Bread



This recipe doesn't originally call for chocolate chips, but chocolate makes everything better, right?!?! I actually don't think it added much to this, it is soooooo good to begin with! But, if adding chocolate chips makes your kids {or your sweet tooth} happy, then by all means, add away! My mom enriched my life with this fall favorite, though the recipe only makes one loaf. That is simply not enough. Plus, it only calls for 1 cup of pumpkin. What are you supposed to do with half a can of pumpkin? So I've added the doubled amounts to the side of the ingredients{in case math wasn't your strong suit} and you can easily choose which way you want to go and not have anxiety over wasting that leftover pumpkin. You can just plan on doubling it and bring that extra loaf over to me. Thanks. **Warning** If you ever think you'd like to make this or any other pumpkin recipe at any time besides September- December, then it is imperative that you stock up on canned pumpkin NOW while it is still in stores for the season. If you forget, I have plenty! ;) ***Bonus Warning!*** You will totally pick at this all day. You've been warned.


1 1/2 C sugar (3 C)

1/2 C shortening (1 C)

1/2 C water (1 C)

1 C canned pumpkin (2 C or 1- 16 oz can)

2 eggs (4 eggs)

1 2/3 C flour (3 1/3 C)

3/4 tsp salt (1 1/2 tsp)

1 tsp soda (2 tsp)

1/2 tsp cloves (1 tsp)

1/2 tsp nutmeg (1 tsp)

1/2 tsp cinnamon (1 tsp)

1/2 tsp baking powder (1 tsp)


Mix all ingredients together. Spread in a greased and floured large loaf pan {for best results, line bottom of pan with wax paper}. Bake at 350 degrees for 1 hour or until knife clean. Makes one large or two small loaves.

Cinnamon Muffins



Brianne Westberg made it to her first exchange, but couldn't stay long with her squirmy baby. She impressed us with these yummy little bites, even if she did get the season wrong! ;) She brought these as mini muffins, so I'm not sure if this recipe {and baking time} is for mini muffins or regular sized- just keep an eye on them as they cook...


3/4 C softened butter

3/4 C sugar

1 tsp vanilla

2 eggs

1 3/4 C flour

1 tsp baking powder

1 tsp baking soda

pinch of salt

1 C sour cream


Topping: 1/3 C sugar mixed with 3 tsp cinnamon


Heat oven to 375 degrees. Cream butter and sugar. Blend in vanilla and eggs. In another bowl sift together flour, baking powder, baking soda and salt. Pour flour mixture and sour cream into butter mixture. Stir batter by hand until blended. Add a splash of milk. Grease tins. Prepare topping. Drop some batter into tin, sprinkle with topping. Add more batter and sprinkle more topping. Bake for 15-20 minutes.

Tropical Beignets

We recently went out for breakfast to Denny's. They had these Hawaiian Tropical Pancake Puppies that were ok, but they got me thinking... I bet I could make a pretty sweet variation of my Applesauce Beignets! I was so right! Now, I'm sure this is in no way authentically Hawaiian, but I LOVE the tropical flavors all fried together! Plus, I didn't over cook them like the applesauce ones, so extra bonus!


2 1/2 C flour
2 tbsp sugar
3 eggs
1/2 plus 2 tbsp milk
3 tsp baking powder
1 tbsp cinnamon
1/2 C sour cream
1 1/2 C crushed pineapple, mostly drained
1 C coconut, plus some for topping
3 tbsp brown sugar
1/2 tsp salt

In a bowl, combine all ingredients. Blend well. Heat oil on Medium heat and drop by teaspoonful into oil. Fry to desired brownness.

I attempted to roll them in coconut after, but it didn't stick. I'd still suggest at least sprinkling some on top...

French bread/ Breadsticks/ Bread bowls


I love how you can take this one recipe and make so many wonderful things with it! Thanks, again, Mom! My favorite is to make the bread bowls and fill them with my mom's Cheesy Broccoli soup. But that's not what I made the other day, so you get a picture of bread sticks! Some day...


1/2 C warm water

2 tbsp yeast

2 C hot water

3 tbsp sugar

1 tbsp salt

1 tbsp oil

6 C flour


Dough:

Dissolve yeast in 1/2 C warm water. Add rest of ingredients and knead thoroughly. Let rest 10 minutes, then beat down. Repeat 5 more times.


For French bread:

Roll dough into two 9x13" rectangles. Roll up jelly-roll style and pinch seam. Place on cookie sheets sprinkled with corn meal. Brush with beaten egg white and sprinkle with sesame seeds. Cut three shallow diagonal slices on top. Bake 30 minutes at 400 degrees.


For Bread bowls:

Divide dough into 8 equal pieces. Shape each into a ball by tucking under the sides until top is smooth. Bake as for French bread, but cut an X in the top instead of slices.

For Bread sticks:
Roll dough out 1/2" thick. Using pizza cutter, cut into strips 1" wide. Sprinkle with Parmesan cheese, sesame seeds, grated cheddar cheese, or garlic. Bake as for French bread

For Giant Pretzels:
Divide dough into 12 equal pieces. Roll each piece between hands to make a 15" snake. Shape like a pretzel, sprinkle with salt. Bake as for French bread.

Banana Bread

During my pregnancies, I would crave anything cake. To try to minimize the empty calorie intake, I would occasionally make banana bread to munch on instead. I don't know that it was loads healthier, but I felt better! This yummy banana bread came from Angie Randall!



3 C flour


2 1/4 C sugar


3 eggs


1 1/2 tsp baking powder


3/4 tsp salt


1 1/8 tsp baking soda


1 1/2 tsp vanilla


1-4 dashes of cinnamon


1/3 C sour cream or vanilla yogurt


3/4 C margarine


1 1/4 C bananas


Preheat oven to 350 degrees. Mix all ingredients until smooth. Coat loaf pans with cooking spray and sugar. Bake for 50-60 minutes.

Monkey Bread

This was a disaster. Sorry. I was slightly distracted by two handsome men when I was scooping the flour and I think I left a whole cup out! Whoops! Then it got too warm and too big... Eh, everyone still liked it, but it could have been so much better! Ya notice that I say that a lot? Anyway, this monkey bread is so deliciously butter and {should} pulls apart very nicely. This is the original recipe, but I three-fourthed it to get it to fit in my bread machine- wet ingredients first, dry on top!





2 C warm water


1/2 C sugar


1 tbsp salt


2 tbsp yeast


2 eggs


7 C Wondra flour


4 tbsp oil


1 C butter, melted





Mix warm water, sugar, salt and yeast together, set aside for 5-10 minutes. Beat eggs, add to yeast mixture. Add 3 cups flour, beat well. Add oil and remaining flour. Stir and knead if necessary. Cover and let rise 2 hours or until double or overnight in the fridge. Roll out and cut with biscuit cutter. Dip in melted butter and stand side by side in a bundt pan or 3 loaf pans. Let rise 3-4 hours{or 15 minutes in outside in AZ right now!}. Bake at 375 for 20 minutes.

Applesauce Bread

I thought this was another banana bread, but it's not! Applesauce bread! It was as good as any banana bread I'd ever had! Excited to add that to the list of regulars!

1/3 C butter or margarine, softened
1 C sugar
1 egg
1 1/4 C applesauce
1 1/2 C flour
3/4 tsp baking soda
3/4 tsp cinnamon
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/8 tsp ground cloves
1/2 C raisins(optional)
1/2 C chopped walnuts (optional)

In a mixing bowl, cream butter and sugar. Add the egg and applesauce; mix well. Combine flour, baking soda, cinnamon, baking powder, salt, nutmeg and cloves. Gradually add to the creamed mixture just until combined. Fold in raisins and nuts. Pour into a greased 8"x4"x2" loaf pan. Bake at 350 degrees for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

Applesauce muffins

Ohhh... good thing I just added Mom's recipe! This muffin recipe is so versatile and so delish! They can be made and frozen for a latter time, so handy!



1 egg

1/2 C milk

1/4 C oil

1 1/2 C flour

3/4 C sugar

2 tsp baking powder

1/2 tsp salt



Heat oven to 375 degrees. Beat egg slightly, stir in milk and oil. Mix in remaining ingredients just until flour is moistened. Fill greased muffin cups 2/3 full. Bake 15-20 minutes until golden brown. Remove from pan immediately.




Variations:


Fruit: Stir in 2/3 C drained fruit with the milk. Sprinkle tops with cinnamon sugar if desired. i.e. applesauce, crushed pineapple, chopped apricots, chopped cherries, blueberries, whole cranberry sauce, mashed banana, etc.


Cereal: Decrease flour to 1 cup. Stir 3/4 C crushed cereal into milk and egg before adding dry ingredients. i.e. raisin bran, wheaties, any fruit and nut cereal, instant oatmeal, crushed graham crackers, etc.

Applesauce Beignets

I have been craving a good beignet recipe ever since I watched The Princess and the Frog where Tiana has them as her specialty dish. I had this recipe which I'd made before but wasn't as impressed as I'd hoped to be. It had been ages since I'd tried it, so I thought I'd give it another go. I made one important addition to it (sour cream) and they went from ok to fantastic! I used my mom's homemade applesauce which I'd picked up while we were back home for vacation last month (THANK YOU, Mom!). My mom's applesauce is chunky, so there were tasty bits of apples waiting to surprise you. But, if you aren't lucky enough to have my mom within applesauce-stealing distance or don't wanna make your own, you could just use store bought applesauce and if your really determined dice some apples to add... Anyway, here it is!

2 1/2 C flour
2 tbsp sugar
3 tsp baking powder
1 tbsp cinnamon
3 eggs
1 C applesauce
1/2 C milk
1/2 C sour cream

In a bowl, combine all dry ingredients. Blend well. In another bowl, mix eggs, applesauce, milk and sour cream. Add to dry ingredients and mix well. Heat oil on medium heat and drop batter by tablespoonful into oil. Fry desired brown-ness- about 3-5 minutes each side. Sprinkle with powdered sugar. Eat immediately.

*** Tip! To check if your oil is hot, dip the handle end of a wooden spoon into it. If it bubbles around the wood, it's hot! Thanks to my hubby for that tidbit!
I bet these would be good topped with syrup, honey, more applesauce, etc. Or just as is.

Sticky Buns

Brooke Anderson was awesome to host for us this week. One of the best perks of hosting is that your family gets a sampler of the different dishes that are brought. Brooke's boys were so excited about these sticky buns, I wouldn't have been surprised to see them sneaking back in to swipe some! I wouldn't blame them! Some of you may remember these. The recipe is pretty similar, but it's the small differences that matter! Brooke, I gotta say, looking back at the picture of the other ones I see what you mean; cook and serve pudding is the way to go!

Pecans(optional)
20 frozen Rhodes rolls
1/2 pkg cook and serve butterscotch pudding powder
1 tsp cinnamon
1/2 C brown sugar
1/2 C butter

Grease bundt pan and sprinkle pecans in bottom. Place rolls in pan. Sprinkle pudding powder, then cinnamon over the rolls. Melt brown sugar and butter together and drizzle over the rolls. Cover with a wet cloth and let rise 8 hours or overnight. Bake at 350 degrees for 25-30 minutes. Let cool for 5 minutes. Turn over onto serving platter and ENJOY!

***TIP*** A 12 cup bundt pan works best. If you have a 10 cup pan, ya might wanna reduce the number of rolls you put in and maybe put a piece of tin foil under the pan in the oven to catch any spillage. I discovered that I had a 10 cup bundt pan when I made sticky buns...

Whole Grain Blueberry Waffles and Buttermilk Syrup

Michelle Kleinman made her debut with grand style! She got the blueberry waffle recipe from eatbetteramerica.com citing it as a healthy AND tasty way to make waffles. Lest you start to wonder if Michelle is a health nut, check out her Buttermilk Syrup! The Buttermilk Syrup is what she had growing up and swears she'll hardly touch maple syrup any more! I'm going to have to introduce my family to this!

Waffles:
3/4 C flour
1/2 C whole wheat flour
1/2 C quick cooking oats
3 tsp baking powder
1 tbsp sugar
1 1/2 C skim milk
2 tbsp vegetable oil
1 egg
1 C blueberries, rinsed (if using frozen, thaw and drain)

Lightly spray waffle iron with cooking spray; heat waffle iron. In large bowl, stir together flours, oats, baking powder and sugar. In small bowl, stir together milk, oil and egg. Stir into dry ingredients, stirring just until large lumps disappear. Gently stir in blueberries.
Pour slightly less than 1 cup batter onto center of hot waffle iron, spreading batter to edges. Close lid of waffle iron. Bake 3-5 minutes or until waffle is golden brown. Carefully remove waffle. Serve immediately.

Buttermilk Syrup:
1 stick butter
1 C sugar
1 C buttermilk
1 tbsp Caro Syrup
1 tsp baking soda
1 tsp vanilla

Bring the first 4 ingredients to a boil. Let boil 1 minute and remove from heat. Add baking soda and vanilla. Stir and serve!

Lazy Maple Pull- Aparts

First of all, if LAZY is in the title, the recipe is worth exploring! These are like a lazy day Butterscotch Sticky Buns or Sticky Buns- In my opinion, those are both better, but with this one you don't have to plan ahead! If you haven't already decided to keep crescent rolls on hand, I think I've provided enough recipes to justify starting to do so! Just a heads up, the picture makes these look bigger than they are. If you are feeding more than 4 or 5, I'd suggest doubling it.

1/4 C butter or margarine

1/4 C packed brown sugar

2 tbsp maple syrup

1/4 C chopped pecans or walnuts (optional)

1 can refrigerated crescent roll dough

1 1/2 tbsp sugar

1 tsp ground cinnamon


Heat oven to 375 degrees. In ungreased 8 or 9" round pan, place butter, brown sugar and syrup. Place in oven for 2-4 minutes or until butter melts. Mix until well blended; sprinkle with pecans. Remove dough from can. Separate long roll into 2 shorter rolls at the center perforation. With a serrated knife, cut each roll into 6 slices.


In a small bowl mix the sugar and cinnamon. Dip each side of each slice into the sugar mixture and arrange over butter mixture in pan. Sprinkle any remaining sugar mixture over the top. Bake 17-23 minutes or until golden brown. Cool 1 minute. Place heatproof serving plate upside down over pan. Turn plate and pan over; remove pan.

Breakfast Cake



aka Coffee Cake, except we don't drink coffee. This is what my hubby ALWAYS requests for Father's day, birthdays, no good reason... The sweet cake topped with a brown sugar crumble topping... Oh, yeah... We like to double the topping. If you have more than 4 people you are feeding, you may wanna consider doubling the whole recipe. In which case, I recommend quadrupling the topping. That's right. Quadruple the goodness! When there's a little extra, it tends to seep down into the cake and make little pockets of brown sugary heaven. Matt likes to dig out the middle of the cake wherever it looks like one of these pockets may be. Then I punch him in the stomach and steal his piece. ;)


Cake:

1 1/2 C flour

3/4 C sugar

2 1/2 tsp baking powder

3/4 tsp salt

1/4 C shortening

3/4 C milk

1 egg


Preheat oven to 375 degrees. Mix dry ingredients together. Add shortening, milk and egg. Beat vigorously until smooth. Spread in greased 9x9 {or 9x13 if you doubled it} pan.


Topping:

1/3 C brown sugar

1/4 C flour

1/2 tsp cinnamon

3 tbsp firm butter


Mix until crumbly and sprinkle over the top of the batter. Bake 25-30 minutes or until a toothpick comes out clean. Serve warm.


Now, go ahead and smear some more butter around the top and sides of that piece and be grateful that breakfast is the most important meal of the day! BTW- joking about punching my husband. So... don't call the cops. Thanks.

Best Banana Bread

I LOVE this recipe. Funny story: This is another one from my mom and I always loved it growing up. So, I grow up and get married and decide to make this for my husband. Well, it calls for buttermilk, which we don't just have on hand, so I dutifully make a trip to the store to get some. I follow the recipe and stick it in the oven. It smells so good as it cooks, but when I go to pull it out the center is all sunken in and the edges are rock hard. I was seriously disappointed. Undeterred, I tried several times more, each time hoping for that warm, delicious reward. Each time with the same results! I gave up on it for a while and blamed it on my oven. Then we moved. New oven, new chance to succeed! ...Or not. Finally, I call my mom and ask her what in the world I'm doing wrong. That's when I realize: 1 cup of buttermilk, PREPARED! Not 1 cup of powdered buttermilk. Iiii'm an idiot. But she doesn't even use buttermilk. She uses regular milk with some lemon juice in it. That was NOT in the recipe. Now, I am happy to say, I can make it with the best of them! Finally! FYI- the best banana's to use for this are WAY past their prime. I'm talking BLACK peels. Like, when you think a banana is just past that peak of ripeness and starting to taste funny- wait a couple more days to a week. The more past ripe they are, the stronger their flavor. Unless they start to ooze. Then throw them away.

1 C bananas{I use 2 large bananas or 3 small to medium bananas}
1 C sugar
1 C brown sugar
1/2 C shortening
1 tsp vanilla
2 eggs
3 C flour
1 tsp salt
2 tsp soda
1 C nuts, coarsely chopped (optional)
1 C buttermilk {Prepared!! Or about 2 tbsp lemon juice then add milk to make a cup and let sit for a minute and the milk will curdle.}

Preheat oven to 350 degrees. Peel and mash bananas. Add sugar, brown sugar, shortening, vanilla, bananas, and eggs. Cream together. Sift dry ingredients in a separate bowl and add alternatively with the buttermilk. Pour into 2 large, or 4 small greased loaf pans. Bake for 45-50 minutes or until a knife inserted in center of a loaf comes out clean.

Mexican Pull Apart Bread



Ohhh, just thinking about this makes my mouth water! You MUST love heat to fully appreciate this delicious side or appetizer!


1 can (16 oz) Refrigerated biscuit dough, cut into quarters

2-4 tbsp butter, melted

1 1/2 C Mexican shredded cheese blend {Confession, I get a bag of shredded cheddar and monterey jack cheese from Costco that I use any time a recipe calls for shredded cheese...}

3/4 C drained, canned, sliced Jalapeno peppers (this makes it suuuper spicy, so if you aren't feeling it that hot, I'd go with a smaller can of diced jalapenos. Pansy.)

3/4 tsp parsley flakes



Heat oven to 350 degrees. Spray a 9x5 inch loaf pan with cooking spray. Dip 1/3 of the biscuit pieces in the melted butter and place in the pan. Top with 1/3 EACH of the cheese, peppers, and parsley. Repeat layers. Bake 40 to 45 minutes or until golden brown. Let stand for 5 minutes then invert onto a plate. Serve warm.

Orange Knot Rolls

I first had these at Thanksgiving last year when my sister-in-law, Kristen, brought them for dinner. I couldn't get enough! So, I tracked down the recipe in hopes of recreating the amazing-ness. I have to apologize, I slightly overcooked them so they were a little more dry than they should have been. They were still addicting! Warning- These take a good bit of work so they are great for special occasions, but a lot of effort for just any old day!



3 C hot milk

3/4 C sugar

1 C instant potato flakes

1 tbsp salt

1/2 C butter, softened

1/4 C shortening(butter flavored works)

4 whipped eggs, evenly yellow

1 1/2- 2 tbsp yeast(SAF brand- 1 1/2 tbsp. I think I used just under 2)

7-8 C All- purpose flour



Heat milk almost to boiling in microwave, should have skin on top (about 5-6 minutes). Combine sugar, potato flakes, salt, butter, and shortening in bowl and pour hot milk over all. Mix together and let cool about 10 minutes. Mix in eggs and yeast.



Add one cup of flour and then scrape the sides of the bowl until sides are clean. Usually takes just 7 cups of flour, but it can vary with every batch. {I adjusted for the climate and elevation and put about 6 1/2 Cups in and don't think I'd recommend more if you are in Arizona...} Knead for 5 minutes. Put in large greased bowl and cover with a dish towel. Let rise about 1 hour or until doubled.



Pinch off a third or half of dough at a time and roll out oblong on a pastry mat or floured surface{I just realized that I plopped the whole thing onto the counter at once. That might explain why my rolls were so MASSIVE! I find that using Pam on a clean counter works just as well, if not better than flour.} (Flip over and roll out both sides for prettier look.) Spread softened butter over all and flop over bottom and top two thirds to make 3 layers. Flatten slightly with a rolling pin. Use a pizza cutter to make 1/2 inch strips. Hold strips at both ends and twist in opposite directions, then tie into a knot. Place rolls on greased baking sheet. Repeat with the remaining dough.



Cover rolls with waxed paper and let rise 2-3 hours until about doubled.



Bake at 350 degrees for 10-13 minutes until barely golden {slightly less golden than the picture above...} Makes about 4 dozen rolls. {Unless you forget to pinch off half the dough. Then it makes maybe 2 dozen... hehehe}


Variations:

Crescent rolls- Easier and quicker method. Divide dough into thirds, rolling each third into a flat circle about 16-18 inches in diameter. Using a pizza cutter, cut each circle into 16 slices, rolling each slice from the wide end first. Follow remaining directions


Orange Rolls- mix 1 1/2 Cups sugar, 3/4 cups butter, and grated rind of 2 oranges. Spread on dough before layering like knot rolls or spread on circle before rolling up like crescent rolls, or roll into a jelly roll and cut like cinnamon rolls. After baking, frost with 1 1/2 cups powdered sugar, juice from 2 oranges, chunk of butter and some grated rind.


Cinnamon rolls- spread butter the sprinkle mixture of 3/4 C brown sugar, 3/4 C white sugar, and 2 tsp cinnamon(or just substitute cinnamon chips for the mixture). Roll dough into jelly roll and slice into 3/4- 1 inch slices using dental floss. Place on greased pan, cover and let rise about 2 hours. Bake at 350 degrees for about 15 minutes. Frost with a mixture of powdered sugar, milk, vanilla, pinch of salt and butter.

Butterscotch Sticky Buns

This was from me. Again. ;) I've tried several sticky bun (aka monkey bread, aka pull-apart) recipes, and this is my favorite so far. I got this recipe from my sister-in-law, Ashley Nebeker, who got it from a family friend. This kind of stuff is the reason I work out! We have it for breakfast, so we prep the night before and have warm, delicious(sugary) rolls in the morning. I recommend eggs and/or fruit with it, cause it is pretty heavy if that's all you have.

1 pkg frozen roll dough
1 pkg (3 oz) butterscotch pudding(recipe calls for cook and serve, but I use instant)
3/4 C melted margarine (I just realized I only put in 1/4 cup that night! It was still good, but I recommend all 3/4 Cups for maximum delight. Sorry, ladies!)
1 C brown sugar
1 tsp cinnamon

Place frozen rolls into the bottom of a greased bundt pan. Sprinkle with dry pudding mix(I only use about 1/2 a pkg. For some reason, I feel healthier. More butter, less pudding mix. Healthier...) Melt butter in a small sauce pan with brown sugar(I just stick it in the microwave for 30-60 seconds). Stir until well blended. Pour over pudding covered rolls. Sprinkle with cinnamon. Cover with a clean towel. Let rise at room temperature overnight. Bake at 350 Degrees for 25 minutes. Let sit in pan for 5 minutes. Invert onto serving plate.
